Our homegrown Elephant garlic is milder and sweeter than other garlic…try roasting whole: trim, prick all over with a fork, sprinkle with olive oil or butter and season to taste. Cover and bake at 150c. Gas Mark 2 for 60-70 minutes. Or slice raw in salads or roast and mash into a cooked baked potato…it’s definitely worth a try!

Well, the weather is pretty shocking here at the moment, which for us makes planting and picking more challenging…but our thoughts and best wishes go out to the farmers in other areas, including Somerset, who are having an extremely tough time.

Layla’s Heavenly Creations!

Layla has been busy creating some new cake recipes…first out were these delicious Red Velvet cupcakes, especially for Valentine’s Day, light as air sponge with a creamy cream cheese topping! She has also been baking Chocolate and Beetroot Brownies, which are available in our cafe now, and in the farm shops next week. Don’t be put off by the concept of veg in cakes…look at the carrot cake and how we were all sceptical at first! The beetroot works a treat, adding a sweet earthy flavour which really compliments the chocolate…and of course the beetroot is homegrown! Watch out for more delicious cakes coming this way!

Eat Well for Less!

Have you been watching ‘Food and Drink’ on Tuesday nights? They’ve been looking at how to cook up cheaper, but no less tasty food, using different cuts of meat. They’ve cooked a beef steak called ‘mouse’ (because it has a pointed nose!) This is also known as Eye of Silverside, which we sell as a whole joint or which Tony can slice into steaks for you! Delicious pan fried for a couple of minutes each side, and is a change from rump or sirloin. A wyddech chi? Cymaint oedd ei boblogrwydd yn yr Ail Ryfel Byd fel y cyhoeddwyd sefyllfa “Mania Riwbob”. Rhoddwyd coesau riwbob a bag o siwgr i blant yn lle eu dogn losin!

Rhowch gynnig ar y rysáit blasus hwn:

Pork with Black Pudding & Roasted Rhubarb

Ingredients

2 pork fillets, about 350g/12oz each

250g black pudding, skinned and cut into slices

12 thin rashers streaky bacon

1 tbsp olive oil

1 tbsp clear honey

300g rhubarb, cut into 5cm lengths on the diagonal

200ml vegetable stock

2 rounded tbsp crème fraîche

Heat oven to 190C/fan 170C/gas 5. Split the pork fillets lengthwise almost in half and open out like a book. Bash with a rolling pin to flatten, then sprinkle on all sides with salt, pepper and lemon juice. Fill the pork with the black pudding, folding the meat back over it to enclose it. Stretch the bacon rashers with the back of a knife, then wrap around the pork fillets, tucking the ends under the pork where possible. Transfer to a large roasting tin, drizzle with the oil, then roast for 30 mins. Meanwhile, heat the honey in a pan, then toss the rhubarb in the honey. Add to the roasting tin, then return to the oven for 10-12 more mins until the rhubarb is tender and the bacon nicely browned. Transfer the pork and rhubarb to a warm plate and keep warm while you make the sauce. Set the tin on the hob and add the stock. Bring to the boil, stirring to scrape all the pan juices from the base of the tin. Bubble for a few mins, then stir in the crème fraîche and whisk until it has dissolved into the sauce. Taste and adjust the seasoning if necessary. Cut the pork into slices and serve with the rhubarb and a little sauce poured over. Serve the remaining sauce separately.
